Sweet potatoes day
In June this year we planted 5 rows of sweet potatoes. They grow so easily, just water them well once a week and that is enough.
This summer has been hot and no rain at all, normally we take the potatoes out in September but since it didn’t rain we left them until today.
Taking out the potatoes I was really surprised by their size and quantity. Big and many, enough for the whole year. Some potatoes are so enormous that they could feed a whole family. We used them for lunch today and I will give you this simple but delightful recipe.
Peel some potatoes and cook them, really be on top of them because they are easily cooked to much.
Peel some cloves of garlic (I used three big ones)
Three spoons of olive oil
2 dl of yoghurt (unsweetened)
a teaspoon of fennel seeds
freshly ground black pepper
a little bit of oreganos
put the potatoes in a low dish and pour the yoghurt mix on top.
