Paella de Dani

Our friend Daniel from Valencia explained us how to make the genuine paella. We bring you the recipe not only because it is delicious but also because we really love the whole concept of the paella á la Dani.
More than food it is a ritual for family and friends to come together during the weekend and cook this fine recipe in an enormous pan on a special fire. Everybody contributes and the paella pan is the center for socializing. When the paella is ready the pan is served on a table and the people eat directly from the pan, no plates. It reminded me of the Old Dutch way of eating potatoes, straight from the pan, just like Vincent van Gogh painted in his typical way.
To cook the paella you need a special fireplace that can heat the whole pan, or, you can make a nice wood fire and put the pan above this.
Ingredients:
· Short grain rice
· Olive oil
· Chicken
· Rabbit
· Flat green beans
· White butter beans
· Garlic
· Tomatoe
· Paprika in powder
· Saffron threads
Preparation:
Put the pan on a fire that can heat the whole pan.
Cut the chicken and rabbit into small parts 5x5cm.
Sprinkle olive oil in the middle of the pan and fry the meat until it is brown and crispy, the fire should be high.
Now bring the meat to the side of the pan, creating space in the middle for the green beans, the garlic and the butter beans.
Turn them around from time to time.
After five minutes, rasp a ripe tomatoe and join it with the other vegetables, stir for 5 more minutes.
Add the paprika powder stir and quickly fill the pan with water, just until below the edge. Let it all simmer for half an hour on a medium fire.
Now add the saffron and the rice. The water you added should be twice the amount of rice. Dani does it differently. He makes a line of rice that raises one finger high above the water and then another line creating a cross.

Now mix the rice through the water, make sure it is covered everywhere and do not touch it anymore. Turn the fire high for 5 minutes and then 5 minutes medium fire and finally low for more 8 minutes.
Take the paella from the fire and let it rest for some more minutes, if you can resist it. Now everybody grab a spoon…..
